ЖЕСТКОСТЬ ВОДЫ , совокупность свойств воды, обусловленная наличием в ней преимущественно солей кальция и магния. Использование жесткой воды приводит к осаждению твердого осадка (накипи) на стенках паровых котлов, теплообменников, затрудняет варку пищевых продуктов, стирку. Различают временную и постоянную жесткость воды. Первая связана с присутствием в воде гидрокарбонатов, вторая - других солей. Временную жесткость воды устраняют кипячением, постоянную - умягчением воды (добавлением гашеной извести, соды, применением катионитов и др.).
